Welcoming a New Grandchild

We celebrated the birth of our 14th grandbaby last night. Freya Alice Poe arrived July 11, 2016 and weighed in at 7 lbs 6 oz.
We had it at a provincial park just outside of town. We had a picnic supper, swimming in the river and gifts in that order. Definitely not your typical baby shower.
This is what we had for our picnic supper:
We put together a meat tray, a veggie tray, and a fruit tray. We had 7 layer dip in individual plastic cups with tortilla chips, and dinner buns. There was a chocolate banana layer cake with raspberry jam in the middle, iced with chocolate peanut butter icing. There was lemonade for a beverage.
I was disappointed that the people outside of the family couldn't make it, but Dirk and Sam said it was great that it was just our family. It did turn out to be a fun evening. The brothers connected and there was talk and laughs and the little ones had a blast chasing Uncle Damian all over the place.
The river was on the cold side, but there were several brave enough to dive right in!
The guest of honour slept through the whole thing!
Meat Tray
Sliced deli meats of your choice. (I used turkey breast, ham, and roast beef)
Parsley (I used some out of my garden!)
Sliced dill pickles.
I put the sliced dill pickles in a small bowl and set it in the center of the tray. You can use whatever you want in the center. Sometimes, I cube cheddar cheese and put it in the bowl. (I should have put the mayonnaise in my bowl because I forgot to bring it along!)
Roll the slices of meat and stack them in a pleasing manner around the bowl on the tray. Fill in the empty spaces between the stacks of meat with fresh parsley. It's easy peasy! You can scatter grape tomatoes over the whole thing for a burst of cheery colour.
Veggie Tray
I cheated for this and bought a tray that had broccoli, carrots, celery and a small container of grape tomatoes. I made up my own tray with mushrooms, snap peas and more grape tomatoes. I added our favorite french onion dip mix. My family is kind of fussy when it comes to veggie dip. They only like the french onion dip mix. You can make your own easily enough using this recipe:
1 cup mayonnaise
1 cup sour cream
1 pkg dry onion soup mix.
Combine in a small bowl and mix really well. Chill for a couple of hours before serving.

This isn't really a tray, per say. It is a fun and adorable carved watermelon that we found on Pinterest. We have used it for another baby shower before. Isn't it cute?

Chocolate Banana Cake
I baked the cake and Devon came over and rescued it. It had a big crack across the tops of both layers. He brought his handy cake saw(?) leveler thingy and fixed it for me. He put the cake together and frosted it for me. We don't have a photo of it, unfortunately. In transit, the cake slid in it's carrier and smooshed up against the side. Recipe
Lemonade
I cup lemon juice (bottled or fresh squeezed)
1 cup sugar (or sweetener)
1 cup water
Mix in a large jug until sugar is dissolved. Add 6 cups cold water. Stir. Serve over ice.
Individual 7-layer Dip
I love this way of serving a 7-layer dip! It is just the right amount for one person and there is no fear of double dippers!!

I bought some clear, plastic tumblers from the dollar store to serve this in.
1 can refried beans
1 envelope taco seasoning mix
1 container guacamole
1 container sour cream
1 jar salsa
Grated cheddar cheese. (I used a package of Mexican cheese blend)
Chopped green onion
Sliced black olives
Mix the refried beans and the taco seasoning together. Spoon about 2 tbsp into the bottom of individual cups.
Layer the rest of the ingredients, using about 2 tbsp each of the guacamole, sour cream and salsa.
Cover with grated cheese. Sprinkle chopped green onion over top and put a few black olive slices on top of that.
Cover with plastic wrap and chill.
