Recipe: Zucchini Tots
4 medium zucchinis, shredded
3/4 cup breadcrumbs
3/4 cup shredded cheddar cheese
1 tbsp garlic powder
1 tsp pepper
Place shredded zucchini in a bowl. Allow to sit for 20-30 minutes. Some people add salt, to help release the moisture at this stage, but I didn't do that as I didn't want the excess salt in my finished product.
After it has sat for the allotted amount of time, place the zucchini in the center of a clean cotton cloth, and pull up the ends to make a bundle. Squeeze the excess water/juice from the zucchini over a bowl and discard the liquid. Be sure to do this thoroughly.
Place the zucchini back in a dry bowl. Add the remaining ingredients.
Shape into the desired shape (ie: that of a tater tot) and place on a baking sheet lined with parchment paper)
Bake at 400F for 20-25 minutes until golden brown.
I love them just the way they are, but you could serve with a marinara sauce for dipping.
