Recipe: Vegetable Chowder
4 cups chicken or vegetable broth
1 large potato, peeled, cut into chunks
2 carrots, peeled and sliced
1 rib of celery, sliced
i head of broccoli, chopped
2 tbsp butter, melted
3 tbsp flour
1/2 cup milk
8 oz herb and garlic cream cheese
salt and pepper to taste
Bring broth to a boil in pot.
Reduce to a medium simmer and add in chopped potatoes, carrots and celery. Cook until vegetables are tender, approximately ten minutes.
Add in broccoli. Bring to a boil once more, then reduce to a simmer and cook for another 5 minutes.
Mix together flour and butter in a small bowl, and add to the vegetables and broth. Stir to incorporate and allow to cook for 1 minute.
Add in 1/2 cup milk, and cream cheese. Stir until cream cheese has melted.
Season with salt and pepper to taste.
