Recipe: Tomato Cucumber Avocado Salad
Ingredients
1 1/2 cups chopped tomatoes 1 cucumber, peeled and diced 1 avocado, diced 4 oz feta crumbles 2 tbsp red onion, chopped fine 2 tbsp minced fresh parsley Dressing: 2 tbsp olive oil 1 tbsp red wine vinegar ground pepper to taste Combine all salad ingredients, except the avocado in a bowl. In a separate small bowl, combine the dressing ingredients. Whisk to mix well. Pour over salad ingredients and toss gently. Refrigerate to allow the flavors to meld. Chill well. Toss in the chopped avocado just before serving. |
