Recipe: Taco Shepherd's Pie
1 pie shell, partially cooked for 10 minutes
3 large potatoes, peeled and cut into chunks
1 lb lean ground beef
1/2 small onion, diced
2/3 cup water
1 pkg taco seasoning
1/2 cup milk
1/8 cup butter
1 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
Cook potatoes in saucepan, until tender (about 20 minutes).
While potatoes are cooking, brown ground beef with onions, until the meat is no longer pink. Drain and return to pan. Add in water and taco seasoning. Bring to a boil, and then simmer until liquid has evaporated.
Place the ground beef mixture into the bottom of your partially cooked pie shell. Press down lightly.
Drain the cooked potatoes and add in milk and butter with the seasonings. Mash until smooth.
Spread the potatoes over the meat layer.
Bake for 30 minutes at 350F.
Sprinkle cheese on top of the pie, and return to the oven for another 30 minutes.
Allow to sit for 10-15 minutes before serving.
