Recipe: Strawberry Rhubarb Crumble Bars
2 cups rhubarb, chopped
2 cups strawberries, sliced
1 tbsp lemon juice
½ cup sugar
2 tbsp cornstarch
1½ cups flour
1½ cups uncooked quick-cooking oats
1 cup packed brown sugar
¾ cup butter, room temperature
½ tsp baking soda
¼ tsp salt
In a sauce pan, strawberries, rhubarb and lemon juice. Cook over medium heat, stirring frequently, until the fruit is tender.
Combine the cornstarch and sugar together, and add to the fruit mixture. Continue cooking and stirring until the mixture, until it has thickened. Remove from heat and set aside.
In a large bowl. combine the dry ingredients, mixing until it crumbles. Reserve 1 1/2 cups of the the oat mixture, and press the remaining amount into the bottom of a prepared 9x13 pan.
Top the bottom layer evenly with the fruit mixture. Sprinkle the remaining crumble mixture on top of the fruit layer.
Bake at 350F for 30 minutes. Allow to cool completely before cutting.
