Recipe: Southern Rum Baked Beans

A great side, using whatever variety of beans you prefer. Sweet and tangy.  Great for BBQ's or potlucks too!

Ingredients:

6 slices of bacon, cooked, drained and chopped (reserve 2 tbsp of bacon grease)
1 cup chopped sweet onions
2 garlic cloves, minced
1 - 28 oz can of baked beans
4 16 oz cans of beans of your choice, drained and rinsed *(I used black beans, cannellini beans, blacked eyed peas and lima beans)
1/2 cup packed brown sugar
1/2 cup ketchup
1/2 cup gold rum
1/4 cup apple cider vinegar

Saute onions and garlic in reserved bacon grease.

In a large bowl combine the onions and garlic, bacon, beans, and all remaining ingredients.

Pour into a prepared 9x13 pan. Cover with foil and bake for 30 minutes. Remove foil and bake at 350F  for another 30 minutes.
