Shepherd's Pie
2 lbs ground beef 2 large carrots, grated 1 cup frozen corn 2 medium onions, chopped 1 tsp minced garlic 2 envelopes shepherd's pie seasoning mix 1 envelope brown gravy mix Hot mashed potatoes Heat a large skillet with a little bit of oil and add garlic, onion, grated carrot and frozen corn. Saute until onions are translucent. Add ground beef and scramble fry until no longer pink. Mix the shepherd's pie mix, following the pkg directions for the amount of water, in a two cup measure and pour into meat and vegetables in the skillet. Stir the gravy mix into 1 cup of cold water, making sure it is well mixed and stir into the skillet. Pour the mixture into a large casserole dish or a small roaster and spoon the mashed potatoes over all. Smooth potatoes to cover all the meat. Bake in a 350 degree F for 30 minutes or until bubbly. |
