Recipe: Oven Roasted Potatoes
These are My Man's favorite potatoes. I used to do them a lot but for some reason it has been a while since we have had them.
He showed me how to make them when we were first married and I made them his way until there were 10 of us to cook for and then his way took way too long. Here's how I do it: Scrub however many potatoes you think you will need for the amount of people you are feeding and then do 2 or 3 more. I cut the potatoes in quarters, lengthwise, and then cut each quarter into chunks.
Now, this is where I deviated from his way...he rubs each individual chunk with a bit of butter or margarine, whatever you want to use. When there was just the two of us, that was okay. However, as we added to the family, it was way easier to pop the marg or butter into the microwave to melt it.
Toss the chunks with the melted butter or margarine. Sprinkle with seasoning salt until lightly coated. I can't tell you how much I use because I just eyeball the amount.
Spread in a single layer on a baking sheet with sides. Bake in a 400 degree oven, for about 45 minutes. Make sure that your oven rack is on the second rung from the bottom.
Serve hot. These lend themselves well to almost any casual meal. I use these as a replacement for baked potatoes or frozen French fries.
