Recipe: Oven Pot Roast
1 tbsp oil
1 boneless chuck roast, about three pounds
1 1/2 cups water
1 envelope brown gravy mix
1 envelope Italian salad dressing mix
1 envelope onion soup mix
1/2 tsp garlic powder
1/4 tsp pepper
3 lbs potatoes, peeled and quartered
1 lb carrots, cut into 2-inch pieces
Preheat oven to 325 degrees. In a dutch oven, heat oil over med heat.
Brown roast on all sides. Mix together the envelopes of mixes, whisk in garlic powder and pepper. Pour into bottom of pot, and bring to a boil. Cover and bake for 1 1/2 hours.
Add veggies, and cook another 1 1/2 hours or until meat and veggies are tender. Skim fat if necessary.
Yield: 8 servings
