Recipe: Butter Tarts
Due to budget restrictions this Easter, I didn't get My Man his customary chocolate egg. I didn't want him to go without a treat, so I made up a batch of his favorite butter tarts. I usually only make these at Christmas time. This is my Mom's recipe and she was tickled when My Man couldn't get enough of these the first time she served them to him.
I used store bought tart shells that I had in my freezer. Normally I would have used the leftover pastry from making the lemon meringue pie, but I was a bit rushed for time, and I needed to use the tart shells up anyways, since they had been in the freezer from Christmas last year when I didn't make butter tarts for the first time in the 35 Christmases we have been married. I got 68 buttertarts out of this recipe. Preheat oven to 450 degrees F. 4 eggs, beaten 1 1/3 cups melted margarine 4 cups brown sugar 8 tbsp milk 2 cups raisins 4 tsp vanilla Mix all ingredients together - fill tart shells 2/3 full. Bake at 450 degrees F for 8 minutes. Reduce heat to 350 degrees F and bake 15 to 20 minutes until golden brown. |
