Recipe: Mexican Street Corn Salad
Ingredients:
Dressing: 1/2 cup cilantro, fresh, chopped 3 tbsp lime juice 1 tsp salt 1/2 tsp black pepper 2 tbsp olive oil Salad 2 cups fresh or frozen kernel corn 1 cup radishes, sliced thin (I omitted this) 1 cup cherry tomato halves 1/2 cup feta cheese crumbles Mix dressing. Combing with salad ingredients and refrigerate until ready to serve. |
