Recipe:  Mashed Potato Patties

 Ingredients

3-4 cups left over mashed potatoes
2 eggs
salt and pepper to taste
2 rounded tablespoons of flour
1/4 cup milk
paprika (optional)

Add salt and pepper, and flour to the mashed potatoes. Mix well.

Slowly add in the milk, making it into a thick batter. You do not want it to be runny. Mix well.

Drop batter into a hot buttered pan. Fry on both sides, sprinkling with a bit of paprika for flavor if desired.

* In order to keep them from falling apart I suggest you turn them only once during cooking, making sure that the sear on the bottom side is there before flipping.
