Recipe: Manicotti
4 tsp oil
1 medium onion, coarsely chopped 1 lb ground beef 14 manicotti 1 (15oz) container ricotta cheese 3 cups shredded mozzarella cheese 1 cup Parmesan cheese 2 garlic cloves, minced 3 cups pasta sauce 2 tbsp butter, cut into pieces Heat skillet over medium heat. Add t tsp oil, onion and ground beef. Saute until meat browns and onion is translucent (about 5 minutes) Remove from heat and cool. Brush 1 tsp oil over baking sheet. Cook manicotti in large pot of boiling water until slightly softened, but still very firm to the bite (4-6 minutes). Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and let cool. Combine ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup Parmesan cheese. Add garlic. Stir the cooled meat mixture into cheese mixture. Preheat oven to 350 degrees. Brush oil over bottom of a baking dish. Spoon 1 1/2 cups sauce over bottom of dish. Fill manicotti with meat mixture. Arrange in single layer in dish and put the rest of the sauce over top. Sprinkle 1/2 cup mozzarella cheese over the top. Bake uncovered until heated through, about 30 - 35 minutes. Let stand 5 minutes before serving. |
