Recipe: Ham Salad
The days when its just simply to hot to cook are nearing for many of us, and already here for others. It's time for light lunches and dinners that are easy to make and are in the fridge ready to go when you are, so you can enjoy the lazy hazy days of Summer to their fullest.
This recipe can be made with ready made flaked ham in a can, or if you prefer, like I do, freshly ground ham from leftovers from dinner or a portion of a large ham steak. I use a small food chopper to get the consistency I like. Ingredients 2 - 5 ounce cans of flaked ham or approximately 1 - 1 1/2 cups of ham that you have minced yourself 3 tbsp finely chopped celery 1 tbsp finely chopped onion 3 tsp sweet relish 1/2 cup mayonnaise 1 tsp Dijon mustard Combine all ingredients together until well blended. Serve on crackers, buns, croissants, a bed of lettuce. Whatever you prefer. If you like season with a little pepper. The ham is already salty, so I'd caution against adding salt to the recipe. Store leftovers in the fridge. |
