Recipe: Halibut Fennel Pot Pie
(This is soooo good!)
I substituted cod for the halibut because halibut was so expensive! This makes 4 pies. 2 tsp cooking oil 1 cup thinly sliced fennel bulb (white part only) 3/4 cup sliced leek (white part only) 1 cup Alfredo Pasta Sauce 1/2 cup water 1 tbsp lemon juice 1 lb Halibut fillets, small bones removed, cut into 1 inch pieces 3/4 cup frozen corn 1 tbsp grated Parmesan cheese 1/4 tsp pepper 1/2 pkg of puff pastry, thawed according to pkg directions 1 large egg 1 tbsp water Heat oil in frying pan on medium heat. Add fennel and leek Cook for about 5 minutes, stirring often until softened. Stir next 3 ingredients in a small bowl until smooth. Add to fennel mixture. Heat and stir for about 1 minute until boiling. Add next 5 ingredients. Heat and stir for 2 minutes. Spoon into 4 ungreased 1 1/2 cup size ramekins. Roll out puff pastry on lightly floured surface to 12 x 12 inch square. Cut into 4 squares. Whisk egg and water in small bowl. Brush top rims of ramekins with egg mixture. Place 1 pastry square over each ramekin. Press pastry onto ramekins to seal. Gently brush remaining egg mixture over top. Cut 3 slits in top of each square to allow steam to escape. Arrange ramekins on baking sheet with sides. Bake in 400 degree oven for about 15 minutes until pastry is puffed and golden. |
