Recipe: Greek Salad
(yield: 6 servings)
1/2 head lettuce, torn into bite size pieces
1 head Romaine lettuce, torn into bite size pieces
2 tomatoes, cut bite size OR 2 cups grape tomatoes
1 cucumber, cut into bite size pieces
1/4 cup sliced green peppers
1/4 cup sliced black olives
3/4 cup cubed feta cheese
1/2 cup cooking oil
1/4 cup red wine vinegar
1/4 cup chopped parsley
1/8 tsp salt
1/8 tsp pepper
1/8 tsp oregano
1/8 tsp garlic powder
Layer lettuce in a large salad bowl or on a large platter.
Spread with tomatoes, cucumber, onion, olives and cheese.
Dressing: Beat all 7 ingredients together well. Shake before serving.
