Recipe: Garlic Smashed Potatoes

For this, I just use the small potatoes that come in a bag. The ones I use are usually a mix of the red and white, (sometimes purple ones are in there, too). Boil potatoes in their skins, until tender. When they are done, drain potatoes, and arrange on a baking sheet that has been lightly sprayed with non-stick cooking spray. Gently smash with either a fork or a potato masher. You don't want them to fall apart, you just want to squish them a little bit. Then I spoon butter that has been melted with minced garlic. I always use way more garlic than I probably should! I eyeball the amounts, so I'm not sure just how much I use. I would say, try 1 minced garlic clove to 1 tbsp of butter, depending on the amount of potatoes you use. For 1 pound of potatoes use 4 cloves of garlic and 4 tbsp butter. Experiment! Bake in a 400 degree oven for about 20 minutes. |
