Recipe: Crockpot Cheeseburger Soup
1 lb ground beef
1 onion, chopped
3-4 potatoes, peeled and chopped
3 cups chicken broth
1 1/2 cups milk
2 carrots, shredded
1 celery rib, chopped
1 tbsp dry parsley flakes
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dry basil
1 8oz package of Velveeta, chopped
1/2 cup sour cream
I shredded cheese for garnish if you desire.
Saute the onion and ground beef in a skillet, until the onion is tender and the ground beef is no longer pink. Drain and transfer to the crockpot.
Add in chopped potatoes, carrots, celery, seasonings, milk, and chicken broth. Stir.
Cook on low for 6-7 hours.
Add in the cubed cheese and stir until the cheese has melted. Add in sour cream, and stir to combine.
Garnish with shredded cheddar cheese if desired.
