Recipe: Crockpot Beef Stew and Dumplings
Ingredients
3 lbs beef stew meat 1/4 cup flour 1/2 tsp salt 1/2 tsp pepper 1 clove garlic (I use 2-3 because I love garlic) 1 bay leaf 1 tsp paprika 1 tbsp Worcestershire sauce 1 1/2 cups beef stock 1 tbsp beef bouillon 3 potatoes cubed 1 onion chopped 2 stalks celery 3-4 chopped carrots Instructions Place stew meat in the crock pot. Sprinkle flour, salt and pepper on top and then toss meat to coat completely. Add all other ingredients, and cover. Cook on low for 6-8 hours of high for 4-6. If you desire, add dumplings (recipe below) 30 minutes before the cooking time is up. If needed, thicken your stew with a slurry of 4 tbsp corn starch and 4 tbsp water. DUMPLINGS: 1 c flour 2 tsp baking powder 1 tsp sugar 1 tbsp margarine, melted 1/2 cup milk Mix all ingredients and spoon on to the top of your finished stew. Cover and simmer for 30 minutes. Makes 6-8 dumplings depending on the size. *If you are using a crock pot for your stew the method is the same except cover the top of the crock pot with foil and then a lid, so that the steam remains inside of the pot. It still only takes 30 minutes (on high). |
