Recipe: Country Bacon and Tomato Pie
1 unbaked pie shell
4-6 slices of bacon, cooked and chopped
3-4 thin slices sweet onion
6-8 tomatoes, sliced thin
1/3 cup fresh basil, chopped
2/3 cup Greek yogurt or sour cream
1 egg, beaten
2 cloves garlic, minced
1 1/2 cup Italian blend cheese, shredded
1/2 tsp salt
1/2 tsp pepper
1/4 to 1/2 tsp nutmeg
dash of hot sauce (optional)
Place sliced tomatoes on paper towels, salt them lightly and allow them to drain for about an hour.
Arrange the sliced onions on the bottom of the pie shell. Add the bacon on top of the onions.
Next, layer the drained tomato slices.
Combine the remaining ingredients in a bowl and spread over top of the tomatoes.
Bake 45 minutes at 350F.
Allow to cool and set for 10 minutes before serving.
