Recipe: Chocolate Banana Cake with Chocolate Fudge Frosting

This cake will become a often requested family favorite!

Ingredients:

2 cups sugar
1 cup shortening
2 eggs
3 ripe bananas, mashed
1/2 cup cocoa
2 1/2 cups flour
2 tsp baking soda
1/4 tsp salt
1/2 cup buttermilk
1 cup boiling water

Cream shortening and sugar.

Add eggs and mashed bananas to creamed butter/sugar mixture.

In another bowl, sift together dry ingredients.  Add dry ingredients to the creamed mixture, alternating with the buttermilk.  Mix well.

Add in boiling water a bit at a time and mix well.

Pour batter into a prepared 9x13 pan, and bake at 300F for 50-60 minutes.

Frosting

1 cup white sugar
1/2 cup cocoa
1/2 cup margarine
1/4 cup milk
pinch of salt
1 tsp vanilla

While the cake is cooling, mixture sugar and cocoa in a saucepan. Add in milk, margarine and salt and cook over low heat. Stir constantly and allow the mixture to come to a boil.

Let the mixture boil for 2 minutes without stirring.  Remove the mixture from the heat source, and add in the vanilla.

Allow the frosting to cool for 20 minutes, before frosting the cake.
