Recipe: Chicken and Cheese Quesadilla Pie
1 large tortilla (or a couple of medium sized ones cut to fit)
1 rotisserie chicken
1 4oz can mild green chiles
2 cups of shredded Mexican blend cheese (divided in half)
1 tsp dried cilantro
1/2 tsp chili powder
1 cup milk
1 cup flour
1 tsp baking powder
Prepare a 9 inch spring-form pan with cooking spray. Arrange tortilla(s) to cover the bottom in a single layer, cutting the tortillas if necessary.
Shred meat off of the rotisseries chicken. Place chicken in a bowl and combine with green chilies, 1 cup of the shredded cheese, cilantro, and chili powder. Transfer the chicken mixture to the baking pan and spread in an even layer.
In a bowl combine the milk, flour and eggs until smooth. Add in the baking powder. Pour the batter over top of the chicken layer.
Sprinkle the remaining cheese over top and bake for 20-25 minutes at 425.
Allow to sit for a few minutes after removing from the oven to set. Remove from the spring-form pan and slice as you would a pie to serve.
