Recipe: Blackberry Crisp
This recipe can be used for any fresh fruit crisp. I usually triple this recipe for any crisp I make.
1/2 cup oats ( quick cooking)
1/2 cup packed brown sugar
1/4 cup flour
1/2 tsp cinnamon
1/4 cup margarine
Combine oats, flour, brown sugar, cinnamon in a bowl. Cut in margarine until mixture resembles coarse crumbs. Put fruit in ungreased baking dish. Sprinkle crumb mixture over all.
Bake in 350 degree F oven for 40 - 45 minutes.
When making my blackberry crisp, I mixed 4 tbsp of tapioca and 1 tbsp sugar together and tossed with the fruit. As the crisp bakes, the tapioca thickens the fruit juice.
I picked fresh blackberries from along our back fence in the morning and washed and drained them well. I didn't measure how many cups of berries I used. I just put them in a baking dish and triples the above topping recipe. It tasted fantastic!
