Recipe: Beef Barley Soup


Mama B

6 cups beef broth
6 cups water
28 oz can crushed tomatoes
2 cups shredded carrot
2 cups shredded potato
1 1/2 cups chopped onion
1 cup chopped celery
1/2 cup pot or pearl barley
1 tbsp parsley flakes
1 tsp sugar
1 tsp salt
1/4 tsp pepper
1/4 tsp thyme
3 cups cooked roast beef, chopped

Mix all into a large crockpot and cook on low 6 to 8 hours.

This makes about 22 cups of soup. And it freezes well!!

You can also substitute scramble-fried ground beef for the roast beef.
