Recipe: Banana Muffins
1 3/4 cups flour
1 tsp baking soda
1/4 tsp salt
1/2 cup margarine, softened
1 1/4 cups sugar
1/4 cup sour cream
1 cup mashed bananas (3 medium)
Put flour, soda,and salt in large bowl, stir and make a well in the center.
In another bowl, cream the margarine, sugar and one egg.
Beat in second egg. Stir in sour cream and bananas. Pour into well and stir to mix. Batter will be lumpy.
Fill greased muffin cups 3/4 full. (You can use paper liners instead of greasing the cups.)
Bake at 400 degree oven for 20 to 25 minutes.
Yield: 16 muffins.
