Recipe: Apricot Glazed Pork Tenderloins
4-6 pork tenderloin chops
1 cup baby carrots
6 potatoes, cut into large chunks
1 onion, chopped
1 jar (16 oz) apricot preserves/jam
Place the baby carrots on the bottom of the crock pot, followed by the potato and carrot chunks.
Layer the pork chops over top of the vegetables.
Spoon the apricot preserves over the top of the pork chops.
Cover, and cook on high for 4 hours or 6-8 on low
