Recipe: Amish Refrigerator Pickles

Ingredients:

6 cups sliced cucumbers
1 cup white vinegar
1 tbsp salt
2 cups white sugar
1 cup sliced onions
1 cup sliced bell peppers

In a saucepan, combine the vinegar, salt and sugar, bringing to a boil. Cook for about 10 minutes, or until sugar is dissolved.

Place the cucumber slices, onions and peppers into a large bowl.

Pour the hot vinegar mix over top.  Allow the cucumbers to sit for a few minutes as they will shrink a little, before transferring them to sterilized jars (securing with sterilized lids.

These are refrigerator pickles, so store in the fridge. They are not meant for long term storage on a shelf.
