Flavourful Meatloaf
1 medium carrot, shredded 1/4 cup chopped onion 2 tbsp soy sauce 1 tsp tomato paste 2 garlic cloves, minced 1/4 tsp ground ginger 1/8 tsp crushed red pepper flakes Pepper to taste 1 pound ground beef Mix together the first 8 ingredients: add the ground beef and mix together really well. Shape into a loaf in an ungreased baking pan (I use a bread pan). Bake at 350 degrees F for about 45 to 50 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees. Let stand for 10 minutes before slicing. Yield: 4 servings. Steamed Lemon Broccoli 1 large bunch broccoli, cut into spears 1 medium onion, halved and thinly sliced 1 cup thinly sliced celery 3 garlic cloves, minced 3 tbsp marg 2 tbsp grated lemon peel 1 1/2 tsp lemon juice 1/4 tsp pepper Steam broccoli in a steamer basket over 1 inch of boiling water, covered: for about 5 to 6 minutes or until crisp-tender. Rinse in cold water: drain and set aside. In a skillet, saute the onion, celery,and garlic in marg until veg are tender, about 5 minutes. Add the lemon peel and juice, pepper and broccoli: heat through. Yield: 4 servings |
