Herb Coated Cod 1/4 cup marg, melted 2/3 cup butter-flavoured cracker crumbs 2 tbsp grated Parmesan cheese 1/2 tsp dried oregano 1/2 tsp dried basil 1/4 tsp garlic powder 1 pound cod fillets Place butter in a shallow bowl (pie plate). In another shallow bowl ( or pie plate)combine the next five ingredients. Dip fillets in butter, then in crumbs, coating evenly. Place in a greased 13 x 9 x 2 inch baking dish. Bake, uncovered, at 400 degrees for 15 to 20 minutes or until the fish flakes easily. Yield: 4 servings Monterey Green Beans 1/2 cup chopped green onions 3 tbsp marg 1 package (9 oz) frozen cut green beans 1 can mushroom stems and pieces 1/2 tsp lemon-pepper seasoning 1/4 tsp salt 1/2 cup shredded Monterey Jack cheese In a saucepan, saute onions in butter until tender. Add beans, mushrooms, lemon-pepper, and salt. Cover and cook over medium heat for 5 minutes or until beans are tender. Sprinkle with cheese; cover and let stand for 1 minute, or until cheese is melted. Yield: 6 servings French fries I cheat and use frozen :) |
