Holiday Recipes - Holiday Batter Bread
1 tsp sugar
1/4 cup warm water
1 envelope (1/4 oz or 8g) active dry yeast
1/2 cup milk
1/4 cup margarine
1/4 cup sugar
1 tsp salt
1/4 cup cold water
1 large egg, beaten
3/4 cup raisins
1 cup cut mixed glazed fruit
3 cups flour
Stir first amount of sugar in warm water in a small bowl. Sprinkle yeast over, set aside for 10 minutes. Stir to dissolve.
Scald milk in pot. Remove from heat.
Stir in margarine, second amount of sugar and salt. Pour into large bowl.
Add cold water. Mix in egg, raisins and fruit. Add yeast mixture. Stir.
Add flour. Stir to moisten. Cover with greased wax paper and a tea towel. Let stand in warm place for 15 minutes. Batter will be thin. Spoon into greased 9x5x3-inch loaf pan. Cover with greased wax paper and tea towel. Let stand in warm place about 1 1/4 hours until doubled in size.
Bake in 350 degree oven for 30 to 35 minutes. Turn out onto rack to cool.
Makes 1 loaf.
