Frugal Fridays -- Homemade Hot Chocolate Mix

(Yield: about 4 cups mix)

1 cup powdered sugar
1/2 cup unsweetened cocoa powder
1/2 cup non-dairy cream powder
1/4 tsp salt
2 3/4 cups instant non-fat milk powder
1 cup mini marshmallows, if desired


In a sifter, combine the first 4 ingredients and sift into a large bowl. Stir in milk powder and marshmallows, if using. Pour into a 4 cup container with a tight fitting lid. Seal container. Label with date and contents. Store in a cool dry place. Use within 6 months.

To use: Stir 3 to 4 tablespoons mix into one cup hot water to make one serving.
Homemade Cream of Chicken Soup

Strain 1/2 of each jar into the filtered one. Change the filters half way through, making sure that you don't get any of the grounds in the new jar.

I only needed to do mine once, but if you used a finer ground than coarse, you may have to strain the grounds more than once.

Cover with a lid and refrigerate.

Serve over ice, with a flavored creamer, and you won't need to add any sugar.  As good, if not better, than those store bought cartons, and much, much less expensive!
