Holiday Recipes - Pumpkin Loaf
Ingredients
2 cups flour 2 tsp baking powder 1/2 tsp salt 1/2 tsp ground ginger 1/4 tsp baking soda 1/4 tsp ground cloves 1 cup packed brown sugar 1/3 cup shortening 2 eggs 1 cup canned pumpkin 1/4 cup milk 1/2 cup coarsely chopped walnuts (optional) 1/2 cup raisins (optional) Stir together flour, baking powder, salt, ginger, baking soda, and cloves; set aside. In large mixer bowl, cream together brown sugar and shortening until light; beat in eggs. Add the pumpkin and the milk; mix well. Add flour mixture and mix well. Stir in chopped nuts and raisins, if using. Turn batter into greased 9x5x3-inch loaf pan. Bake in 350 degree oven for 55 to 60 minutes or until wooden pick inserted near center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool completely on wire rack. Wrap and store overnight before slicing. Makes 1 loaf. A Mama B note: I used evaporated milk instead of "regular" milk and I added a half cup of chocolate chips instead of the nuts and raisins. |
