Holiday Recipes - Cranberry Pecan Pie
Ingredients
single pie crust (9 inches) 3 large eggs 3/4 cup sugar 1/2 cup butter, melted 3 tbsp flour 1 cup chopped pecans 1 cup fresh cranberries (chopped) 1 cup chocolate chips 2 tbsp dark rum Precook pastry shell in pie plate at 450 for 15-20 minutes (line pie shell with 2 layers of foil, and fill with beans or rice for pie weights. DO NOT prick the crust with a fork or the filling will leak later. Throw used pie weights in the garbage or store the in a marked container to use for pie weights again in the future. They will not be good for cooking after using them for the pie) Remove foil and pie weights, reduce oven to 350F and bake the pie shell for another 5 minutes. Remove from oven and allow to cool while you make the filling. Beat eggs and sugar together. Add in melted butter. Mix well. Slowly add in the flour, until it is well blended. Add in the pecans, chopped cranberries and chocolate chips. Combine well, and pour into the cooled pie crust. Bake pie for 30-35 minutes until golden brown. Cool well before serving so it can set. |
