Holiday Recipes - Chocolate or Butterscotch Marshmallow Squares
Ingredients:
1/4 cup margarine or butter 1/2 cup peanut butter 1 cup semi-sweet chocolate chips Bag of miniature marshmallows ( 8 oz or 250 g for our metric friends) Melt margarine with the peanut butter in a large pot. ( I use my dutch oven because I double the recipe every time I make this) Stir in chocolate chips until melted. Cool so you can hold your hand on the bottom of the pan. Add the marshmallows and stir until they are all coated. Pack in a 9x9 inch pan. (I line my pans with either waxed paper or parchment paper for easier removal to cut into squares). Makes about 36 squares. Note: You can add chopped walnuts (1/2 cup) or coconut (1/2 cup) Substitue butterscotch chips for the semi-sweet chocolate chips. If you buy the huge bags of miniature marshmallows, 250 g (or an 8oz bag) is 5 cups of marshmallows. You can also use the coloured miniature marshmallows instead of white ones. |
