Recipe: Chicken and Broccoli Stirfry
1 lb chicken, cut into bite sized pieces
1 head broccoli florets
2 tbsp oil , divided
1 clove garlic, minced
1/4 tsp ginger
1/2 green or red sweet pepper, sliced or chopped
1/4 cup onion, chopped
1/4 cup teriyaki marinade
1/4 cup chicken broth
1 tsp soy sauce
2 tsp sesame oil
1 tsp sugar
slurry -- 1 tsp cornstarch with 1-2 tsp water
Saute chicken pieces in 1 tbsp oil, until cooked. Remove from pan and set aside.
In the same pan, add another tablespoon of oil, and sauce garlic, onions and peppers until softened.
Add the chicken back into the pan, along with the teriyaki marinade, chicken broth, soy sauce, sesame oil and sugar. Cook for another 3 minutes.
Add in slurry and cook, stirring constantly, until thickened.
Serve over cooked rice.
